Green Eggs & Ham Recipe
This year our season theater tickets included Seussical, a delightful musical with Dr. Seuss’s characters, including Horton and references to Green Eggs & Ham. Since I had lots of green vegetables and ham in my refrigerator, as well as fresh eggs from my daughter’s chickens, I made this delicious version (there are hundreds, even thousands out there since Dr. Seuss is so beloved by children and adults) of Green Eggs & Ham for breakfast.

I paired my Green Eggs & Ham with crunchy sourdough toast, and was happy all day. Hopefully you’ll try my version, and will like it as much as I do. You can substitute any green veggies you may have around, including leftovers like broccoli, asparagus, spinach, green chilies, jalapenos, or green peppers – whatever strikes your fancy. It will be good no matter what you add.

4 Servings


1/4 cup butter
1 to 2 cups diced ham

1 cup zucchini, chopped
1 bunch green onion, chopped
3 cups baby kale, chopped

8 eggs, blended in a bullet blender

Salt and freshly ground black pepper, to taste

  1. Melt the butter in a large skillet over medium heat.
  2. Add the ham and stir until lightly browned.
  3. Add the vegetables and stir until they are crisp tender.
  4. Pour the eggs over all and stir until the eggs are set.
  5. Sprinkle with salt and pepper. Serve immediately.
