Oatmeal Pie Bars Recipe
It seems that since I have a small family, I sometimes have leftovers – even cookies if my grandkids don’t happen to visit. Rather than freeze the extras (they take up too much room in the freezer), I have tried to find ways to use them up before they go stale. These Oatmeal Pie Bars are loosely similar to pecan pie bars, but the filling is full of ground or chunky oatmeal cookies. These bars are luscious, and easy to make. The gooey oatmeal filling is even better than the original cookies.

You can use any kind of oatmeal cookie, either store bought or homemade. Some of my favorite oatmeal cookies that I use in these Oatmeal Pie Bars are Loaded Oatmeal Cookies, Chocolate Oatmeal Crunchers, and Oatmeal Raisin Walnut “Old Man” Cookies Recipe.

32 Bars

Crust:
1/2 cup butter
1/2 cup brown sugar
1 cup flour

Filling:
2 eggs
1/2 teaspoon baking powder
1/2 teaspoon vanilla
1 cup brown sugar
2 cups oatmeal cookie crumbs, or coarsely chopped oatmeal cookies

  1. Preheat oven to 375°. Line a 9 x 13" pan with parchment, or grease well with butter.
  2. Crust: Cream the butter and brown sugar until light and fluffy. Add the flour and mix well. Pat onto the bottom of the prepared pan. Bake for 15 minutes, or until delicately colored and firm to the touch.
  3. Topping: With the mixture on low speed, beat the eggs, baking powder, vanilla, and brown sugar until the sugar is dissolved. Do not overbeat or turn the mixture to a faster speed; there should be no foam. Stir in the cookie crumbs.
  4. Pour the topping over the baked cookie base, and smooth the top. Return the pan to the oven and bake 15 minutes or until the top is golden brown and firm. Remove the pan from the oven, let the bars cool completely to room temperature, then cut into squares.
