Instant Pot Italian Potato Soup Recipe
While reviewing a wonderful cookbook, The Tried & True Cookbook, that has since become a favorite, I ran across a recipe for Creamy Zuppa Toscana and adapted it to be made in my Instant Pot. The yummy result is the following Instant Pot Italian Potato Soup. I love my Instant Pot and love the fact that everything is cooked in one pot, eliminating the need to wash several pans. The Italian sausage infuses the soup with amazing Italian flavor without having to add a bunch of spices.

This is great served with crusty bread, and if you have time, a tossed salad.

12 Serving


1 pound hot Italian Sausages
8 ounces peppered bacon, chopped

1 large onion, chopped
2 cloves garlic, finely minced

2 pounds potatoes, peeled and cut into 1/2" dice (I use Russet or Yukon Gold)
8 cups chicken broth, canned or made with bouillon)

4 cups baby kale, or spinach, chopped
2 cups heavy whipping cream
Salt and freshly ground black pepper

  1. Turn the Instant Pot to the sauté setting. Add the Italian sausage and brown. Transfer to a strainer and drain.
  2. Add the bacon to the pot and cook and stir until the bacon is crisp. Transfer the bacon to paper towels to drain.
  3. Pour off all but 2 tablespoons of the bacon fat.
  4. Add the chopped onions and garlic and stir until the onions begin to soften.
  5. Turn off the pot and add the potatoes, browned Italian sausage, and chicken broth. Cover the pot, set the valve to sealing, and set to manual for 12 minutes. When the cycle has finished, release the pressure.
  6. Stir in the kale and stir until limp. Turn the pot to the sauté setting and stir in the heavy whipping cream and drained bacon pieces.
  7. Once heated, turn off the pot, taste for salt and pepper, adding if necessary. Serve.
