Chocolate Toffee Blondies Recipe
Recently I saw a toffee chocolate blondie at a hospital cafeteria, and bought it for dessert. It was okay, but not amazing, so I went home and made my own using real butter, brown sugar, plenty of toffee bits and chocolate. The following Chocolate Toffee Blondies are chewy, gooey, and delicious. Make sure you use the highest quality chocolate in your bars, at least 60% cacao, and without a bunch of preservatives like are found in low quality chocolate chips.

These are especially good and gooey warm from the oven, but they keep well in an airtight container if there are any leftovers.

32 Blondies

2 cups packed brown sugar
1 cup melted butter
2 eggs
1 teaspoon vanilla

2 cups flour
1/2 teaspoon salt
1 teaspoon baking powder
1/4 teaspoon baking soda

2 cups 60% cacao dark chocolate or bittersweet chocolate, cut into 1/2" chunks
1 8 oz. package English toffee bits such as Heath

  1. Preheat oven to 350°. Line a 9" x 13" baking pan with Silpat or parchment.
  2. Place the brown sugar in a large mixing bowl; pour the melted butter over and mix until the brown sugar is dissolved.
  3. Add the eggs and vanilla and mix well.
  4. Place a fine strainer over the mixture; measure the flour, salt, baking powder, and baking soda into the strainer and shake through. Mix well.
  5. Stir in the chocolate chunks and English toffee bits.
  6. Press the mixture into the prepared pan. Bake about 30 minutes or until set and golden.
  7. Remove from the oven. Cool before cutting into 32 bars.
