Chocolate Banana Innkeeper's Pie Recipe
I have been making a favorite pie called Innkeepers Pie for years. It is a cross between a pie and a cake and has a yummy, gooey chocolate layer along with the cake. When I had several bananas getting overripe, I decided to adapt this recipe to flavor the cake layer with the bananas, along with the chocolate. The following Chocolate Banana Innkeepers Pie is the delicious result. It makes a great alternative to banana bread, and uses up the bananas nicely.

This pie can be made ahead, and is just as good a day or two after baking.

1/2 cup walnuts

chocolate Layer
1/2 cup water
1 1/2 ounces unsweetened baking chocolate
2/3 cup granulated sugar
1/4 cup butter
1 1/2 teaspoons vanilla

Cake Layer
1/4 cup softened butter
3/4 cup sugar
1 egg
1/2 teaspoon vanilla
3 ripe bananas

1 cup flour
1 teaspoon baking powder
1/2 teaspoon salt

1/2 cup milk

1 9" unbaked pie shell


  1. Preheat oven to 350º.
  2. While the oven is heating, place the walnuts in the oven and toast them, about 10 minutes. Remove them from the oven and chop.
  3. Chocolate Layer: Measure the water into a small saucepan; bring the water to a boil.
  4. Add the baking chocolate and let sit until softened; stir well.
  5. Add the sugar and turn on the heat; bring to a boil and stir until the sugar is dissolved.
  6. Turn off the heat and add the butter and vanilla; stir until the butter has melted and set the mixture aside.
  7. Cake Layer: Cream the 1/4 cup softened butter and 3/4 cup sugar; beat in the egg, vanilla, and banana until smooth.
  8. Place a fine strainer over the mixture; measure the flour, baking powder, and salt into the strainer and shake through.
  9. With the mixer on low speed, add the milk and mix well; transfer the mixture to the unbaked pie shell and smooth the top.
  10. Pour the chocolate mixture over the cake batter and sprinkle with the nuts.
  11. Bake about 45 minutes or until a toothpick inserted into the center comes out clean. Remove from the oven and let cool thoroughly before cutting into 10 wedges.
  12. Top each wedge with sweetened whipped cream.
