Stupid Pie Recipe
Lately while checking for interesting recipes online, I have run into several with ridiculous names. While the English are famous for some oddly named dishes such as bubble and squeak, spotted dick and Toad in the Hole, and others, most US websites stick to names that make sense. I ran across a recipe for “Stupid Pie,” which, when looking at it, found it is similar to Soda Cracker Pie, which I’ve been making for years. This one uses Ritz crackers, which changes the taste slightly. It was disappointing that the recipe I found tops the pie with what I consider a major food crime, frozen whipped topping. So, I tried Stupid Pie and topped mine with real sweetened whipped cream, because it would be really stupid to ruin it with a non-foodstuff like frozen whipped topping. I also garnished mine with fresh berries which dressed it up.

3 egg whites
3/4 cup sugar

23 Ritz crackers, coarsely crushed
3/4 cup chopped pecans
1 teaspoon vanilla

1 1/2 cups heavy whipping cream
1/2 cup powdered sugar

2 cups fresh berries, or other fruit such as blueberries, raspberries, peaches, etc.

  1. Preheat oven to 350°. Spray a 9" pie dish with non-stick spray.
  2. Place the egg whites in the bowl of a mixer; beat at medium speed until frothy. Turn the power to high and gradually sprinkle in the sugar, beating until stiff peaks form.
  3. Fold in the crackers and pecans; stir in the vanilla. Transfer the mixture to the prepared pie dish.
  4. Bake 25-30 minutes or until puffed and golden.
  5. Remove from the oven and cool thoroughly.
  6. Whip the cream and powdered sugar until stiff. Spread over the cooled pie. Garnish with the fruit. Refrigerate at least two hours before cutting into 8 wedges.
