Triple Treat Oatmeal Drops Recipe

Oatmeal cookies are my husband’s favorite, so I’m always trying new recipes to see if he likes them. He likes oatmeal cookies that stay soft, aren’t too sweet, and have just enough add-ins to make them interesting. The following Triple Treat Oatmeal Cookies are a hit with him, and the texture is good. He especially likes the peanut butter chips and the bit of crunch from the toffee bits.

These cookies are perfect for filling up the cookie jar, and are quick and easy to make. Kids seem to like them, too, especially my 42 year-old kid.

1 cup butter
1 cup brown sugar
1/2 cup granulated sugar
2 large eggs
2 teaspoons vanilla
2 1/2 cups oats
2 cups flour
1 teaspoon baking soda
3/4 teaspoon salt
1 teaspoon ground cinnamon
3/4 cup semi-sweet chocolate chips
3/4 cup peanut butter chips
3/4 cup toffee baking bits, (such as Heath)

1 cup butter
1 cup brown sugar

2 1/2 cups oats

1 teaspoon baking soda
3/4 teaspoon salt
1 teaspoon ground cinnamon
3/4 cup semi-sweet chocolate chips
3/4 cup peanut butter chips
3/4 cup toffee baking bits, (such as Heath)
- Preheat oven to 350°. Line 3 or 4 baking sheets with silicone liners or spray with non-stick spray.
- Cream the butter, brown sugar, and granular sugar until light. Add the eggs and vanilla and beat until light and creamy, scraping the sides once or twice. Mix in the oats.
- Place a fine strainer over the mixture and measure in the flour, baking soda, salt, and cinnamon; shake through.
- Turn the mixer to low and mix well. Stir in the chocolate chips, peanut butter chips, and toffee bits.
- Drop by tablespoonfuls onto the prepared baking sheets. Press each cookie a little with your fingers.
- Bake 9-12 minutes or until the edges are beginning to brown and the middles are still soft. Remove from the oven and transfer to cooling racks. Store in an airtight container or freeze.
