Spicy Steak & 'Shrooms Recipe
Recently I found petit sirloin steak on sale, and tried to think of an easy to use it. Grilled is always good, but that particular cut of meat isn’t as tender as some of the more expensive cuts. I also had some sliced mushrooms that needed to be used up, so I sliced the steak thin across the grain to insure that it would be tender, and prepared it similar to one of my family’s favorite chicken dishes, Spicy Chicken and Mushrooms. Spicy Steak & ‘Shrooms is very tender and flavorful.

Years ago, Schilling sold a coating mix called Season n’Fry and I used it in our favorite chicken. However it was discontinued because it contained MSG (which has since been proven safe). Because we loved that dish, I worked to clone the coating mix, and according to family members, it is very close to the original. I have included the recipe here, but you can use your favorite coating mix if you have one.

8 Servings


1 1/2 pounds beef sirloin steak, or beef petit sirloin
2 eggs

1 cup flour
3/4 cup Almost Season n'Fry, or a package of your favorite coating mix

1 stick butter, (1/2 cup)

1 pound sliced mushrooms
2 cups grated cheddar cheese

1 1/2 cups beef broth


  1. Preheat oven to 350°.
  2. Trim the steak of any fat and slice it thin against the grain. Beat the eggs in a bowl and add the meat, stirring so all the pieces are coated.
  3. Mix the Almost Season n'Fry or your favorite coating mix in a gallon size zip-type bag with the cup of flour. Shake to mix, then pour in the beef mixture. Seal the bag and knead it until all of the beef pieces are coated.
  4. Melt the butter in a large, non-stick skillet. Dump in the beef and stir over medium heat until the beef pieces are browned and crisp. Transfer them to a shallow 11" x 13" glass baking dish.
  5. Stir in the mushrooms. Pour the beef broth over all and sprinkle the cheese evenly over the beef. Bake 30-35 minutes or until the cheese is crisp and bubbly.

Almost Season 'N Fry Single Batch



1/2 cup flour
1 1/2 teaspoons salt
2 teaspoons modified food starch (Ultra Gel, Ultra Set or similar)
2 teaspoons MSG
1/4 teaspoon white pepper
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/8 teaspoon cayenne pepper
1/8 teaspoon paprika
1/8 teaspoon turmeric
1/8 teaspoon sage
1/8 teaspoon celery salt


Mix all ingredients well.



Almost Season 'N Fry Large Batch



6 cups flour
1/4 cup salt
1/2 cup modified food starch (Ultra Gel, Ultra Set or similar)
1/2 cup MSG
2 1/4 teaspoons white pepper
2 1/4 teaspoons garlic powder
2 1/4 teaspoons onion powder
1 1/8 teaspoons cayenne pepper
1 1/8 teaspoons paprika
1 1/8 teaspoons turmeric
1 1/8 teaspoons sage
1 1/8 teaspoons celery salt


Mix all ingredients well. 1/2-3/4 cup equals 1 package depending on how much coating you prefer.
