There seems to be a trend toward making bread at home, whether it be in an automatic bread machine or trendy sourdough loaves. Cider Mill Press has released an excellent cookbook, Bread: The Ultimate Cookbook, that is filled with almost every type of bread you can imagine, including sourdough, yeast breads, and quick breads. It includes history of bread, a glossary of grains and pulses, information on ingredients, and techniques, and a section in the back of the book showcasing successful bakeries and interesting information about them. There are recipes for breads popular around the world, including Foccacia and pizza. The loaves range from plain yeast and sourdough, and include whole grain breads, white breads, vegetable breads, chocolate breads and holiday breads.
The recipes are written in the traditional manner with the ingredients listed first. Followed by step-by-step instructions which are easy to follow. There are also notes at the top of each recipe explaining where it’s from and how it’s served. While it’s got specific instructions on how to make the doughs by hand or by mixer, the recipes are easy to adapt to an automatic bread machine – either to make the dough or to bake as a loaf. The cookbook also includes beautiful, mouthwatering photographs of most of the recipes.
All told, this cookbook has enough recipes that everyone will find something appealing that they want to make. There are seemingly hundreds of recipes.
