Cookbook are not always just recipes; rather many include cultural information of a country or region. One such cookbook is In the Kusina: My Seasonal Filipino Cooking, by Woldy Reyes, an American Filipino from California. Filipino dishes are delicious, and most who have tasted it will want to recreate those dishes at home.
There are dozens of appealing recipes that will tempt almost everyone. The recipes are traditional and straightforward with the ingredients listed first followed by step-by-step instructions that are easy to follow and can be successfully made by both beginning and advanced cooks. Most of us will need to visit an Asian grocery store to purchase the ingredients because they are unique and aren’t readily found in mainstream grocery stores. There are a lot of recipes with Bibingka in the title. Bibingka is a type of rice cake popular in the Philippines and uses special rice flours. The rice flours called for in the recipes were available at my favorite Asian grocery store.
There is a good list of American Filipino products and ingredients in the beginning chapters, as well as several recipes for condiments and sauces used in the recipes which follow; they are all fairly simple to make and store.
Most of the recipes are accompanied by beautiful, professional photographs that make the dishes look especially mouthwatering. Those who haven’t seen Filipino food will be blown away and regret missing it until now.
