Thai Spiced Cucumbers Recipes

Cucumbers are easy to grow, and I always have them in my garden. I love eating them as they are, with salt, but I also like them marinated. Since I love Thai flavors, I make the following Thai Spiced Cucumbers whenever I serve Thai dishes such as curry. These cucumbers take only about 15 minutes to put together, and they last a day or two in the refrigerator. I like to put these cucumbers on sandwiches or add them to tossed dinner salads. They are also good served as a condiment.

These cucumbers make a refreshing side dish to an outdoor gathering or barbecue, and the dish is quick and easy to put together. For variety, you can add diced red bell pepper, chopped red onion, and sprinkle with finely chopped peanuts.
8 Servings
1 large cucumber, ends cut off and thinly sliced
1/4 cup freshly squeezed lime juice
1 tablespoon sugar
1 tablespoon Thai fish sauce
1/4-1/2 teaspoon crushed red hot pepper
1 tablespoon vegetable oil
For variety, you can add chopped red onion and sprinkle with finely chopped peanuts.

1 large cucumber, ends cut off and thinly sliced

- Place the cucumber slices in a medium bowl with a tight-fitting lid.
- Measure the remaining ingredients into a bullet blender or regular blender and whiz until well-mixed.
- Pour over the cucumbers, cover, and refrigerate at least one hour before serving (turn the bowl upside down and shake it a bit once or twice during chilling so that all the cucumbers are coated.)
