Most of us love wood-fired pizza, and think that it’s necessary to purchase a wood-fired pizza oven. However, Dina Guillen has proven us wrong in her excellent cookbook, Pizza on a Plank: Make Wood-Fired Pizza on Your Grill!, which shows us how it’s possible to make mouthwatering pizzas on a gas or electric grill. Although I’ve made salmon and a few other things on a plank, it never occurred to me that I could make my favorite food, pizza on a plank. I found that different kinds of wood planks are available based on Guillen’s suggestions. The first chapters in the book give readers all the information needed to start making wonderful varied types of pizzas. There are step-by-step photographs showing how to put the dough on the plank, as well as tips and helps so that anyone, advanced or beginning cooks, can make the recipes successfully.
There are several types of pizza dough, depending on what kind of pizza you plan to make, and I successfully adapted them to make the dough in my automatic bread machine which saves hands-on time. However, the doughs are easy to make in a bowl on the counter. The book also includes different sauces to top your pizzas.
After the basics, Guillen shows how amazing her imagination is with recipes for pizzas that most of us haven’t thought of that are innovative and mouthwatering, as well as traditional pizzas. The recipes include the writer’s notes, followed by a list of ingredients, then step-by-step instructions. The recipes are very easy to follow and they are accompanied by beautiful, professional photographs of almost everything.
All told, this is an excellent book. Anyone perusing this book will find they have a long queue of “must make this week,” and since the pizzas are so easy, they will actually make them.
