When I first realized that Life-Changing Salads: 100 Plant-Based Salads and Dressings Beyond Your Wildest Greens is a vegan cookbook, I was very disappointed, since vegan is not a diet that my family and I like. However, after reading through the book, I found it was easy to substitute non-vegan ingredients to make the recipes in the book. Because almost everyone loves salads, especially in the summertime, I decided to give this book a chance and make salads from this cookbook with my own changes. The author, Danielle Brown, who is the brains behind the blog, Healthy Girl Kitchen, has included dozens of mouthwatering (sans vegan ingredients with subs for regular ingredients) salads that are very appealing.

The recipes are written in the traditional manner with the ingredients listed first, followed by step-by-step instructions that make the recipes very easy to follow, for both beginning cooks and advanced cooks. Brown has a good imagination, and there are dozens of yummy salads that will be great as side dish or main dish salads at any family dinner or get-together. The salads include vegetable salads, grain based salads, and fruit salads, as well as miscellaneous salads. Many of the recipes are similar to everyday salads that have gone through communities and are go-to salads; Brown has just adjusted the recipes to make them vegan (which in many cases is a travesty against our favorite foods).

One of the best parts of the cookbook is that there are beautiful, professional photographs of almost all of the recipes, making them seem even more mouthwatering.

All told, if you’re vegan, you’ll want to pick up this book immediately. If you’re not, but are good at substituting vegan ingredients and adapting recipes to your lifestyle, you may want to pick up this cookbook.
