Slow Cooker Chocolate Banana Pudding Cake Recipe
Although my family eats a lot of bananas, there are always some that end up over-ripening and I’m obligated to find something to make with those too ripe to eat. My family is sick of banana bread, banana cupcakes, banana bread pizza, banana cookies – you get the picture. Chocolate and banana flavors complement each other, so I decided to make a gooey Slow Cooker Chocolate Banana Pudding Cake, which is something I hadn’t yet made. Luckily I was able to combine and adjust some recipes I had already made, and have adapted some of them to make this yummy cake. It is easy to put together, and “bakes” without much monitoring.

Bottom Layer:
2 cups brown sugar
1/2 cup unsweetened baking cocoa
1/2 cup melted butter

Cake:
1 package chocolate fudge cake mix, (13.25 ounce)
1/4 cup flour
1 3 oz. package instant pudding mix
3 medium overripe bananas
2 cups sour cream
4 eggs
1 cup milk
3/4 cup vegetable oil

Whipped cream, or ice cream

  1. Spray a 3-6 quart slow cooker with non-stick spray (I use my 9" x 13" casserole crock, but use any large slow cooker with a large footprint if available).
  2. Bottom Layer: Mix the brown sugar and cocoa; stir in the melted butter; spread over the bottom of the slow cooker.
  3. Cake: Mix the cake mix, flour, and pudding mix; beat in the bananas (no need to mash first – the mixer will do that), sour cream, eggs, milk, and vegetable oil.
  4. Pour the batter over the bottom layer and spread evenly.
  5. Cover and cook on high 2 hours; turn to low and cook an additional hour or until center is just set; a toothpick inserted in the center will come out with moist crumbs when done. Alternately, cook on low 4-6 hours.
  6. To serve: spoon into bowls, spooning the bottom layer on top of each serving while hot. Top with whipped cream or ice cream.
