German Sloppy Günters Recipe

Everyone seems to like hot sandwiches like Sloppy Joes. The filling can be made in the traditional way, or can be flavored differently, like Mexican, Italian, or Asian. After making a Instant Pot German Pot Roast recently, and enjoying the flavors, I thought it would be fun to make a German version. I used leftover roast beef in these Sloppy Günters. These are best on pretzel buns, which are available at many good bakeries, or, you can make your own.

German mustard, sautéed peppers and onions mix with shredded roast beef along with dill pickles to bring out the traditional German flavors of rouladen.

4 slices bacon, chopped
1 medium onion, quartered and sliced
1 green bell pepper, quartered and sliced
1 red bell pepper, quartered and sliced
1/3 cup chopped dill pickles
3 tablespoons German mustard
2 to 3 cups leftover cooked roast beef, shredded
2 cups water
1 tablespoon granular beef bouillon
1/3 cup water
3 tablespoons flour
Salt and freshly ground black pepper, to taste

1/3 cup water

- Cook the bacon in a large skillet until crisp. Remove the bacon from the pan to paper towels to drain.
- Add the onion to the bacon fat and sauté until softened.
- Stir in the red and green peppers, pickles, and mustard. Sauté for a minute or two until the peppers soften.
- Stir in the shredded leftover beef. Stir in the water and granular beef bouillon. Bring to a boil and let cook until the beef and vegetables are heated through.
- Mix the 1/3 cup water and flour; stir until smooth (I use my bullet blender). Stir into the boiling meat mixture until thickened. Serve on pretzel buns.
