Chicken Ramen Dump Dinner Recipe
Ramen noodles have a bad reputation due to the fact that most of us had to eat them during our college days. But they can be made into delicious dishes if one uses the imagination. This easy Ramen Dump Dinner is one that uses leftover shredded chicken, dry crushed ramen noodles, and frozen broccoli. The noodles are covered with a cream cheese/milk mixture flavored with one of the ramen packets and they soak up the liquid while cooking. If you don’t have any leftover chicken, you can use a store-bought rotisserie chicken, or even canned chicken. This dump dinner takes about 10 minutes to put together before baking for about 30 minutes.

This one is a keeper, especially for weeknight dinners. For variety, you can substitute beef ramen and shredded beef instead of chicken.

8 Servings

6 3 oz. packages ramen noodles, broken up

4 cups whole milk
1 8 oz. container softened cream cheese, chive and onion flavor, or scallion flavor, or garlic flavor
2 to 3 cups shredded chicken breast
1 16 oz. package frozen broccoli florets

2 cups shredded sharp cheddar cheese

  1. Preheat oven to 400°. Spray a 9" x 11" baking dish with non-stick spray.
  2. Spread the ramen noodles over the bottom of the baking dish.
  3. Whisk together the milk, cream cheese, and one seasoning packet from the ramen (reserve the remaining five packets for another use).
  4. Sprinkle the shredded chicken evenly over the noodles.
  5. Top with the broccoli and sprinkle the broccoli with the cheese.
  6. Bake 30-35 minutes or until the cheese is golden and the cream mixture is bubbly.
