Butterfinger Blondies Recipe

Bars and squares are the quickest and easiest cookies to make. Generally the dough is just pressed into a pan, and after baking, is cut into squares. But the fact that they are easy doesn’t diminish the fact that they are often delicious. These Butterfinger Blondies are quick and easy, but are chewy and flavorful.

3/4 cup butter, 1 1/2 sticks
2 cups brown sugar
2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
2 eggs
2 teaspoons vanilla
2 8 oz. packages butterfinger baking bits, divided
1/2 cup semi-sweet chocolate chips

2 8 oz. packages butterfinger baking bits, divided
1/2 cup semi-sweet chocolate chips
- Preheat oven to 350°. Spray a 1/4 sheet pan or 9 x 13" glass shallow baking dish with non-stick spray.
- Place the butter and brown sugar in a microwaveable container; microwave on high power for 2 minutes. Stir; microwave an additional 2 minutes. Stir until the brown sugar is dissolved. Transfer to a mixing bowl.
- Measure the flour, baking powder, and salt into a fine strainer set over the butter mixture. Shake through and stir.
- Add the eggs and vanilla; mix until smooth. Stir in 1 1/2 packages of the Butterfinger bits; reserve the remaining for the topping and set aside.
- Spread the dough evenly into the prepared pan.
- Bake 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Immediately sprinkle with the chocolate chips; let sit 5 minutes, then, with an offset spatula, spread the chocolate over all.
- Sprinkle the remaining Butterfinger bits over the chocolate and press down slightly so they stick. Cool thoroughly before cutting into 32 bars.
