The introductory chapters cover the information that will make the difference for would-be artisan bakers. They cover flours, sourdough starters, and baker’s yeast breads. Then the author has added dozens of recipes for loaves that will rival regular wheat bakery breads. The recipes are written in the traditional manner with the ingredients listed first, followed by step-by-step instructions. The comments at the beginning of the recipes include tips to make perfect loaves.

Another positive aspect of this excellent book is that there are beautiful, professional photographs that give readers and bakers a good idea of how the finished loaves should look. It is amazing that loaves can turn out so perfect when made with gluten free ingredients.

All told, anyone who wants or needs to eat gluten-free will want to pick up this cookbook.
