20 Minute Chinese Noodle Bowl Recipe
Hungry and in a hurry? The following 20 Minute Chinese Noodle Bowl is quick and easy and also inexpensive to put together. It includes ground beef (if you have packages of ground beef from the Ground Beef Module, it’s even quicker because the ground beef is already browned and ready to go. Ramen noodles, frozen stir-fry vegetables, Asian stir-fry sauce (your favorite, but I usually use Yoshita’s Sauce or, If I have it in my fridge All Purpose Chinese Stir-Fry Sauce), and coleslaw mix make this quick and delicious.

Because I have a small family and usually have leftovers, I use them to make a crunchy noodle salad. I have a Peanut Dressing from my Thai Noodle Salad, and I also sometimes use a store-bought sesame dressing; either will do. To this salad, I add crunchy red pepper, a few fresh jalapenos, sugar snap peas, and green onions. You can add whatever you want to your leftover noodle salad. You may even like the salad better than the original noodle dish.

6 Servings

1 pound ground beef
1/2 chopped medium onion

1 16 oz. package coleslaw mix
1 cup water
1/2 cup Yoshida's Sauce, or your favorite Chinese cooking sauce
3 3 oz. packages beef ramen noodles
1 16 oz. package frozen stir-fry vegetables
1 tablespoon Oriental sesame oil

  1. Brown the ground beef in a large skillet or wok with the onions over medium heat, breaking up the meat. Pour off any accumulated fat.
  2. Add the coleslaw mix, cover, and let cook 2-3 minutes or until wilted.
  3. Add the water and stir-fry sauce. Place the noodles on top of the mixture and place the frozen vegetables on top.
  4. Cover, bring to a boil, and let cook 3-5 minutes, breaking up the noodles as they soften.
  5. Mix well and drizzle with the sesame oil. Serve.
