Air Fryer Beef Chimichangas Recipe

Pot roast is a popular Sunday dish, and I have learned to make it perfectly in my Instant Pot. Because I have a small family, I always have leftovers, and have been learning to use those leftovers in versatile ways. The following Air Fryer Beef Chimichangas are a quick family favorite. These delicious chimichangas can be made – start to finish – in less than 30 minutes.

One of the reasons I love my air fryer is that I can significantly reduce the fat content by spraying food with a Air Fryer Oil Spray Bottle; it is much easier, faster, and less messy than brushing.
Plain roast beef can be turned into a spicy (or not - as you like), Mexican flavored filling for not only these chimichangas, but also tacos, burritos, tostadas, etc. These have plenty of both meat and cheese, and are delicious.

2 cups leftover cooked beef, shredded
1/2 cup medium salsa
1 4 oz. can diced mild green chilies
6 large flour tortillas
3 cups finely grated cheddar jack cheese
2 to 3 tablespoons vegetable oil
Garnishes
Shredded Lettuce
sour cream
salsa
guacamole
chopped green onion
chopped tomato

2 cups leftover cooked beef, shredded
1/2 cup medium salsa
1 4 oz. can diced mild green chilies
6 large flour tortillas
3 cups finely grated cheddar jack cheese
2 to 3 tablespoons vegetable oil

- Mix the shredded beef, salsa, and green chilies in a small skillet; heat the mixture over medium heat until the salsa is absorbed into the beef.
- Lay the flour tortillas flat and place 1/6 of the mixture about a third of the way onto the tortilla. Cover each with 1/2 cup of the cheese. Fold the tortilla, envelope style (short sides in, then long sides in), over the meat and cheese.
- Spray the rolled chimichangas liberally with oil (or brush if a spray bottle isn't available).
- Preheat the air fryer to 390°,
Lay the sprayed chimichangas in the pan of the air fryer. Let the chimichangas cook until golden brown, about 8-10 minutes. Garnish with preferred toppings.
