Quick Curried Zucchini Rice
Quick Curried Zucchini Rice is a great side dish that is not only different and delicious, it can be assembled in about 10 minutes; cooking time in the rice cooker is about 20 minutes during which time you can prepare the other menu items. This dish is a great accompaniment to almost any grilled meat, poultry, or fish, but goes especially well with Shortcut Tandoori Chicken or Garlic Lime Pork Loin Chops with Zucchini & Red Onion Sauté.

Most busy cooks find that it’s helpful to have dried vegetables and herbs such as dehydrated onion, garlic, and parsley, as well as granular bouillon on hand. These items save time, and there is little or no difference in the finished product. If you decide to use fresh herbs and vegetables in your Quick Curried Zucchini Rice, a food processor makes quick work of these, as well as the almonds and zucchini.

Just a note on saving time: If you do a minimum of cooking, you may want to consider the purchase of a mini food processor. Mini food processors are inexpensive and easily handle small chopping and grating jobs; the bowl, blade, and cover can be loaded in the dishwasher, so there’s very little time needed for cleanup. I also have an appliance put out by Cuisinart called a Smart Stick. This is essentially a handle with a motor that hooks onto a hand blender attachment, a whisk attachment, or a bowl the same size as a mini food processor. I use this often to chop small amounts of vegetables and herbs; it saves lots of time and clean-up is very easy.

Quick Curried Zucchini Rice


6 Servings

1 1/4 cups Converted Rice
2 tablespoons dehydrated onion flakes, or 1/3 cup chopped onion
1/2 teaspoon dehydrated garlic, or 1 1/2 cloves fresh garlic
1 tablespoon granular chicken bouillon
1 tablespoon parsley flakes, or 1/4 cup fresh chopped parsley
1 teaspoon curry powder, (more or less to taste)
2 tablespoons butter
2 tablespoons golden raisins
2 tablespoons chopped whole almonds
2 cups grated and unpared zucchini
2 cups hot tap water

  1. Spray the inside of the rice cooker with non-stick spray.

  2. Place all ingredients in the rice cooker, give it a stir, and let cook until the cooker turns off.

  3. Stir the rice and transfer to a serving bowl.
