Green Curry is a culinary delight as the fragrance and flavours dance around you. Green Curry has a touch of sweetness unlike it's cousin Red Curry and it combines with seafood in a very pleasing manor. Green Curry compliments the sweet flavours of fresh shellfish and fish alike or mixed (talay) quite nicely. It usually is eaten with steamed Jasmine Thai Hom Mali rice or with thin round rice noodles known as Khanom Chin.
You can easily control the spiciness of a Green Curry by the number of chiles you use in the curry paste and also by the amount of coconut milk you add.
