I'll never forget the first time we ate this amazing salad near Inlay Lake with a family there. It is such a special dish and each time we gather together and eat it we remember this wonderful family who made it for us. The armoa is amazing.

Burmese Roasted Eggplant Salad
There are many variations of roasted eggplant salads around the world. I especially love the variations that are popular all over Southeast Asia using roasted eggplants hot off the coals. This is a real palate pleaser recipe from Burma. Also an insight to the long history and culture of the Burmese people whom we love dearly.
