Hi Everyone,

Sorry this is so late. We had a 5 day nor'easter here and my little one was home from school the entire time.

Anyway, the cooler weather was reminding me of a dish that one of my roommates used to make in college. I changed the recipe a bit to fit my family's tastes, but I thought I'd share it with you. I made it for them this weekend and they gobbled it up. I didn't even have any leftovers!
