This is one of my favourite Thai appetizers. The first time I ate these
rice crackers with a prawn-pork-peanut dipping sauce was in a delightful
restaurant in an old teak house in Bangkok called Once Upon a Time. I
later learned these rice crackers were a favourite way to use up left
over rice. Rice is at the heart of the Thai culture. In Thailand instead
of merely saying "How are you?" a common greeting is, "Have you eaten your
rice today?"
Your friends will love this tasty addictive treat. The flavours and
textures are so wonderful this recipe will become a favourite of yours as
well.
You can make the rice crackers yourself, but I usually just buy them in
the Asian Markets. They fry quickly and are so easy to prepare ahead of
time.
One of my favourite restaurants is Vong one of Jean-Georges Vongerictens'
Thai inspired venues. He fell in love with the fragrance and flavours of
Thailand when he lived there and combined his native French cuisine to
that of The Kingdom of Thailand. At Vong they serve a lovely peanut sauce
with rice cakes. This is my easy to make version for home chefs, my
Vong-style Peanut Dipping Sauce.
