In many areas the cool weather of Fall is here and we are ready for warming comfort foods. This is one of my favourite Thai-tastes curry and pumpkin. I prefer using kabocha as the size is perfect for this recipe and the meat has a sweetness that marries well with a spicy Thai curry.
This recipe is great just with pumpkin and a green veggie such as bok choy or greenbeans, but also is excellent using pork or chicken.
To make this dish healthier you can use lite coconut milk. I switched to lite coconut milk a few months go, as I wanted to keep our diet lower in fats and we love the taste just as much.
Pumpkin & Pork Curry (Fak Thong Muu Krung Kaeng Phed)
This is one of my favourite Thai curries as the creaminess of pumpkin and rich spiceness of curry is such wonderful comfort food, and is perfect for a Fall or Winter dinner. Just serve with steamd jasmine rice (Thai Hom Mali new crop rice).
