A traditional Thai dinner is one of shared food or as we call it family style. Many dishes are served for all to share and everyone at the table takes the food from these dishes to eat with rice. Thais only use chopsticks for noodle soups, otherwise they use a fork and spoon mainly using the fork to push the food onto the spoon.

Each person at the table does not get his or her own plate of fried fish or spicy pork. Everyone will get a plate of rice or a large silver bowl or covered basket of rice is served for all to share. It makes the meal more enjoyable' as you can sample as many dishes as you like, and it creates the opportunity for friends to discuss the dishes.

Dipping Sauces or condiments are often served at every meal. One of my favourites is the Nam Phrik Jaew which is very common in Isan-North East Thailand. You make this condiment ahead and keep in the refrigerator for the flavours to meld.

Try this condiment on fried rice, steamed rice, stir-fry dishes and grilled dishes to add a wonderful dimension to the flavours to your taste.
