This is what I often refer to as a Thai'd up recipe, as it is not totally Thai in that I have used local Dungeness crab, and have added a chipotle hollandaise sauce. The chipotles are as close as we can find outside of Thailand to replace the Hilltribe smoked chiles of the North of Thailand.

The only place I know to obtain such smoked chiles is from a vendor in the very back of the Wararot Market in Chiang Mai. The chiles are about the size of a poblano and ripe red, then smoked. They have an amazing flavour that lends a smokiness fragrance and flavour without overpowering. I use these same chiles in my Chicken Fried Rice. Chipotles are a close flavour.

My husband and I developed this recipe years ago and it gets rave reviews and cries for more every time we serve it to family and friends. These crab cakes make the perfect first course or if served in pairs for an entree.
Served with a tossed green salad they make a perfect Weight Watcher friendly meal. I have been very successful with the Weight Watcher's way of making healthy choices and I continue to develop healthy Thai recipes.
