Happy St. Patrick's Day to you all and to honour the Irish there is a bit of green in this meal-mint in the raita! I couldn't bring myself to do a corned beef and cabbage curry-just sounded too weird for us. I am not much of a fan of corned beef as I find it far too salty and too much meat.
Now I do like cabbage, potatoes, and carrots, but prefer to fix some not so overcooked dishes with them. Cabbage, potatoes and carrots are lovely in a curry or stirfy dish for sure. Cabbage thinly sliced and dressed lightly with lime juice, splash of fish sauce, slivers of chile, cilantro leaves, and a dash of sesame makes a nice fresh salad.
