Kaeng Khua Curry Paste (Nam Phrik Kaeng Khua) is a milder curry that is perfect with seafood, both shellfish and fish. I especially like it with combinations like Mussels with Kabocha and Thai Basil. The sweetness of the kabocha has a rich, creamy texture and bright colour. The contrast of the orange kabocha is a great accent to green tipped mussels.
