April 13 is the first day of the three day celebration for Songkram, Thai New Year. April is the hottest month of the year in Thailand and one of the festivities for Songkram is tossing (or should I say) dumping water on each other to celebrate yelling "sawatdee bpee mai" which is Happy New Year!
Another popular way to cool off is eating ice cream. This is my favourite recipe for Coconut Ice Cream with Ginger Sauce. I learned this amazing recipe from Colonel Ian F. Khuntilanont-Philpott in the mid 90’s in Korat, which lies in the plains area and is VERY hot in April. You can buy already candied ginger but the texture will be completely different, or make your own a week ahead of time.
