This is long time family favourite for a tasty Thai meal. Gaeng Phed Gai or Red Curry Chicken is simply awesome with potatoes. It might sound strange to use potatoes in curry when served with steamed jasmine rice, but try it and you will love it. This curry literally dances on the taste buds!
You can use a whole cut up chicken or your choice of parts. If watching calories use skinless chicken breasts, but for flavour I always opt for bone in chicken thighs.
Chicken with Red Curry (Gaeng phed gai)
Gaeng Phed Gai means “hot chicken curry”. This is one of the most popular of all Thai dishes and perhaps the most popular curry. You can either make your own curry paste, or take a short cut and use commercial curry pastes imported from Thailand.
