Using a ripe pineapple is key to the perfect taste of this wonderful Shrimp Curry recipe. The delightful sweet flavor of a ripe pineapple compliments the spiciness of the curry.

The challenge is if you live outside a tropical local such as Hawaii or Thailand or Puerto Rico is how to pick a good pineapple-one that is ripe.

If you have ever eaten a freshly picked ripe pineapple in a tropical country you know how a ripe pineapple should taste. The challenge of course is being able to pick out the freshest, best and ripest pineapple at your local market.

The first thing that gives hope of a "real" pineapple is the fragrance, and second is the yellowness of the bottom of the pineapple, as this is the indication sugar has developed. If the bottom is not yellow it will never develop the sugar off the plant!
