One of our favourite dishes from Isan (Northeast Thailand) is Laab Mu. I use a lean cut of pork such as loin or tenderloin. This is the perfect light and flavourful summer entree.
You can accompany this salad with various fresh Southeast Asian herbs from your garden or Asian markets such as Thai Basil, Pak Chee Farang (Saw Tooth or Culantro), and Cilantro.
I first learned to make this in a cooking class of Kasma Loha-unchit, and then tweaking over the years as I traveled extensively in Isan.
