The difference between honing and sharpening?
Honing is done with a steel where the edge of your knifes blade is straightened out resetting/realigning the sharp edge. It needs to be done either before or after each use. My preference is directly after and that way when I'm ready to use it the next time, it's already got its sharp edge on it.
Sharpening actually involves the removal of some of the metal on your knife through grinding away. It only needs to be done 2 - 3 times per year depending on what you're doing with your knives.
