I'd also like to share a short excerpt from a lovely article in the June 2006 issue of Gourmet, entitled "Cooking my Way to Mexican" by Carolynn Carreno:

"Wait, Josefina. Why are we adding more oil?" I asked.
"Because it needs it."
"But how do you know?"
Josefina smiled sweetly, paused to think, then explained,
"If you don't see ojitos [little eyes] of oil on top of the dish, it needs more."


Trivia answer: A chipotle is simply a smoked jalapeno pepper!
