All fruits and especially citrus are common in Thailand. Thai oranges
stay green when ripe but inside are sweet and juicy and perfect with
seafood and chicken. In this dish sometimes I use lime but the lemon
flavour is a bit sweeter, especially if you use Meyer Lemons which are a
cross between a lemon and an orange. If using limes I suggest Bearss
(West Coast) also known as Persian limes, or in Texas and Florida they are
known as Tahitian limes.
