This was one of my husband's favourite Thai dishes. We often ate variations of Som Tam or Green Papaya Salad all over Thailand in many local markets.
Steve would hear the sound of a mortar and pestle rythmically calling him with promises of those exciting fiery flavours. He would go in the direction of the "music" to locate the anticipated favourite salad. Each region has their own version which makes Som Tam very special and unique every where you go in Thailand.
Green Papaya Salad Phuket Style
In the south of Thailand chiles are used liberally and this Papaya Salad is no exception. I suggest you begin with a couple of chiles and add until you like the hotness of the salad. Remember to balance the hot-sweet-sour-salty taste!
