The other day we bought a beautiful fresh side of wild Sockeye Salmon. We smoked it over charcoal and wood and it had a lovely fragrance and taste. I decided to try something different with the leftovers and formulated this amazing version of Salmon Cakes-Thai Style. I only buy wild salmon for many reasons (Omega 3) and the flavour is so wonderful compared to bland farmed salmon.
