Although we are still enjoying the heat of summer here in California many are beginning to feel fall in the air. This is a wonderful fall dish-Jungle Curry. Serve along with steamed Jasmine Thai Hom Mali rice. This is "new crop rice" and requires less water to cook. It also is more fragrant!

Sticky rice is also often served in small bamboo baskets with this Jungle Curry. Sticky rice is steamed over boiling water in a bamboo woven basket which flavours the rice.

Chicken Jungle Curry (Krung Kaeng Pha Gai)
Exotic Jungle Curry made with not so exotic chicken is a tasty easy curry. In Thailand "paddy chicken" IE frog is commonly used for this curry.
