J is for Jicama
A cup of raw jicama (pronounced “hee-kuh-muh”) provides 27% of the daily recommended intake of fiber and only has 49 calories. It’s also very high in vitamin C which helps ward off colds. Make a simple but nutritious salad combining sliced jicama and avocado with salt, pepper, olive oil and a squeeze of lemon or lime juice.
