K is for Kale
Kale is a leafy, green vegetable that is a member of the cabbage family. It is high in vitamins A and C, which help prevent cancer, and it is a good source of fiber. I like to sauté kale with garlic and olive oil as I would do with spinach. Another use is to throw some chopped kale into a pot of minestrone soup for a healthy boost.
