Ah my favorite legume, lentils are rich in fiber and are very filling for a small amount of calories – only 230 calories per cup. Also studies have shown that eating lentils can help reduce the risk of breast cancer. Check out my recipe for Lentil and Corn Salad and enjoy some today!
