Here's a fun St. Patrick's Day recipe for the whole family to try:
Eggland's Best Green Eggs and Ham

Ingredients:

8 Eggland's Best eggs

1 tablespoon extra virgin olive oil

1/4 pound turkey or ham -- chopped

1/4 cup milk

1/8 teaspoon salt and pepper

1/2 cup * pesto sauce

Heat a nonstick skillet over medium high heat. Add olive oil to pan.
Then add chopped ham and cook approximately 3 minutes. Beat eggs with
milk and salt and pepper. Add eggs to the ham in the skillet and cook
until the desired doneness.

Stir the pesto into the ham and eggs to make them "green". Serving Size=8

Preparation Time :0:15

Per Serving (excluding pesto): 126 Calories; 7g Fat (56.7% calories from
fat); 12g Protein; 1g Carbohydrate; trace Dietary Fiber; 197mg
Cholesterol; 372mg Sodium. Exchanges: 0 Grain(Starch); 2 Lean Meat; 0
Non-Fat Milk; 1/2 Fat.
