Irish Potato Pancakes

Irish potato pancakes are wonderful as appetizers, a side dish, snack, or with a breakfast “fry-up” of rashers (Irish bacon), sausages, black pudding and white pudding, and soda or brown bread. At this time of the year, it's nice to have a little something different for a change. There should be plenty of leftover mashed potatoes, so give these tasty treats a try some night soon.

Our mailboxes are overflowing with catalogs and offers these days. All that shopping! While you're at it, don't forget some treats from the Irish side. Our friends at have all manner of Irish holiday treats. Wouldn't a little Cadbury Flake make a nice surprise in somebody's stocking?
