If you're looking for healthy alternatives to potatoes, give the turnip and rutabaga a try! Both are delicious to eat and quite good for you.
Rutabaga
The rutabaga has only 4g carbs per 1/2 cup - compare that to 14g for potato and 28g for sweet potato!! Plus, that small amount of rutabaga gives you a full 30% of your daily Vitamin C.
Rutabagas are a cross between turnips and cabbage. You can cook them very easily! Just dice them into quarters and put them into a pot of water. Boil for 15 minutes, then drain. You can either eat them whole, or mash them up.
Turnip
The turnip is even better than the rutabaga - it has only 1g of carbs per 1/2 cup!! It's got a massive 140% of your daily vitamin A and 13% of your vitamin C, plus calcium and iron.
Here's a fun recipe for roasted "neeps" -
Cube the turnips and toss them in olive oil. Put them in a baking pan and bake at 350F for 40 minutes. Salt and pepper to taste.
