Real Men Do Eat Quiche

A number of years ago someone said “real men don’t eat quiche”. Not so, real men not only like to eat quiche, but once they found out how easy it was to make- they make it all the time.

Here are a few of my favorite, easy quiche recipes-

Easy Quiche


• 3 eggs
• ½ c melted butter or margarine
• ¼ tsp salt
• 1 c grated Swiss Cheese
• ½ cups biscuit mix
• 1 ½ cups milk
• Pepper to taste
• 1 cup chopped ham


1. In a large bowl mix the eggs, butter, biscuit mix, milk, salt and pepper
2. Pour into a greased tie pan
3. Add the Swiss cheese and ham on top

Bake at 350 degrees for 45 minutes – or until it is lightly browned

Wait 10 minutes after taking it out of the oven before you cut it in wedges to serve it.

Spinach Quiche


• 1 Tbsp margarine
• 3 eggs
• ¼ tsp. pepper
• ½ cup thinly sliced onion
• 1 ½ cups milk
• 1 tsp salt
• ¼ pound of sharp cheese, shredded
• 1 package frozen chopped spinach, thawed and well-drained


1. Turn oven on to 350 degrees to preheat
2. Bake the pie shell for 8 minutes
3. Set the pie shell aside to cool
4. Slightly beat the eggs in a medium sized bowl- set aside
5. In a frying pan sauté the onion in the margarine until they are golden brown
6. Add the milk and heat until it is scalded
7. Add the hot milk to the slightly beaten eggs
8. Add seasoning, cheese and thawed spinach, stir
9. Pour this mixture into the pie shell

Bake for 40-45 minutes.

Cool slightly before cutting to serve.

Broccoli and Rice Quiche


• 1 ½ cups hot, cooked rice
• 3 medium eggs
• 3 oz. grated sharp cheddar cheese
• ¼ cup + 2 T. skim milk
• ¾ cup sliced, canned mushrooms
• 1- 10 oz pkg. frozen chopped broccoli, thawed

1. Preheat oven to 375 degrees
2. Combine the rice, 1 slightly beaten egg, half the grated cheese and the salt
3. Press this mixture firming in the bottom of a 9 inch pie pan
4. Beat the other 2 eggs and add the broccoli, mushrooms and milk
5. Season with salt and pepper
6. Spoon this mixture over the rice mixture
7. Bake at 375 degrees for 25 minutes
8. Sprinkle the remaining cheese on the quiche
9. Bake for 10 more minutes

Cool slightly before serving.

Chilies ‘N Cheese Quiche


• 1 unbaked pie crust
• 2 cups shredded cheese
• 2 T flour
• 4 eggs, slightly beaten
• 1 1/3 cups half & half
• 1- 4 oz can diced green chilies, undrained
• 1 T instant minced onion or ¼ cup chopped onion
• ½ tsp salt
• Dash pepper


1. Preheat the oven to 350 degrees
2. Toss the cheese in the flour
3. In a large bowl stir the eggs, half & half, chilies, onion and salt and pepper
4. Add the cheese mixture and mix well
5. Pour into unbaked pi crust
6. Bake at 350 degrees for 40-45 minutes or until the filling is set
7. Cover the edge of the pie crust with a strip of aluminum foil during the last 10-15 minutes to avoid getting the crust too brown

Now is the time – everyone can learn how to make a quiche!
