Red Beans and Rice (spicy)

This wonderful quick fix recipe comes from Nola Cooper. A fast to make rice and bean dinner guaranteed to satisfy any appetite. Smoked sausage puts this recipe in the 'very special fast meals' category. Serve with the suggested green salad and iced tea. Enjoy!

1 Large Can (40 oz) Light Red Kidney Beans (any brand)

1 package smoked sausage

½ t. cayenne pepper

½ t. Tabasco sauce

Salt and pepper to taste

1 ½ cups Minute Rice

1. Cut smoked sausage in half length wise. Slice into thin half circles.

2. Spray the bottom of large sauce pan with Pam, and brown smoked sausage.

3. Pour Beans directly into pan with smoked sausage and add spices. Cover and let simmer for 10 minutes.

4. In a small sauce pan, prepare Minute Rice according to directions.

Serve rice in bowls with red beans poured over the top.

Great with a leafy green salad and iced tea!
