Feisty Garlic & Pepper Chicken Recipe

I suspect we all have Kikkoman Soy or Teriyaki Sauce tucked away in our kitchen pantrys. They are often only used when Chinese food has been ordered or steak is served. However, these sauces are much more. A combination of Teriyaki sauce, lime juice and garlic is the starting base for this feisty grilled garlic & pepper chicken recipe.


Ingredients

1/2 cup Kikkoman Teriyaki Marinade & Sauce
2 tablespoons lime juice from fresh lime
2 cloves garlic, pressed
3/4 teaspoon ground red pepper (cayenne)
1/2 teaspoon ground black pepper
4 whole chicken legs

Directions

1. Combine teriyaki marinade & sauce, lime juice, garlic, red and black pepper; pour over chicken in large plastic food storage bag. Press air out of bag; close top securely. Turn bag over several times to coat chicken well. Refrigerate overnight, turning bag over occasionally.

2. Cook chicken on grill, 8 to 10 inches from medium-hot coals, 30 to 35 minutes, or until chicken is no longer pink in center, turning over occasionally. (Or, place chicken, skin side down, on rack of broiler pan. Broil, 10 to 12 inches from heat source, 20 minutes. Turn chicken over and cook 15 to 17 minutes longer, or until chicken is no longer pink in center.)

Serves 4. For something different serve with wild rice and steamed spinach seasoned simply with butter.

Hint
A cooling lemon or lime creamy sherbert (or sorbet) would be perfect with this meal. Buy sherbert from supermarket and serve in a custard cup or small clear cup with 2 or 3 slivers of lime peel. Remove pith from peel(the white part of peel) first. Enjoy your meal.
