Black Bean Salsa Salad Recipe


Black bean salsa salad is good with pork chops with orange marmalade glaze. This makes a pretty meal as well as a tasty one. Serve with a simple green salad or a small portion of cooked brown rice. There is just a touch of orange marmalade in the black bean salsa salad. This salad is also delicious with sweet and spicy beef or pork ribs and wheat rolls.

INGREDIENTS

1/2 cup light olive oil
6 tablespoon fresh lime juice from
1/4 cup fresh chopped cilantro*
1 teaspoon ground cumin
1 heaping tablespoon orange marmalade
4 cups cooked black beans
2 medium red bell peppers, diced in small pieces
1 medium green bell pepper, diced in small pieces
1 medium orange or yellow bell pepper, diced in small pieces
1 medium red onion, finely diced
1-1/2 cup cooked whole corn
2 jalapeno peppers (or one for less heat), seeded and finely diced
Salt and coarsely ground black pepper (to taste)

DIRECTIONS

The black beans should be still warm but not hot. Canned black beans are fine to use, just rinse them. Mix the following ingredients in a large bowl, olive oil, lime juice, cumin, orange marmalade and warm black beans. Stir gently, careful not to break the beans. Add the remain vegetables and stir gently again. Taste and add salt and pepper to taste. Serve with broiled pork chops.

Make 8 servings.

Hint:
*If you cannot find cilantro or do not like it, use flat leaf parsley (Italian parsley)



Pork Chops with Orange Marmalade Glaze

INGREDIENTS

8 pork chops (1 inch thick)
1-1/3 cups orange marmalade
Zest of 1/2 orange
1/2 cup soy sauce
4 cloves garlic, crushed to make a paste
Coarsely ground black pepper to taste

DIRECTIONS

Mix marmalade, orange zest, soy sauce and garlic, black pepper together. Remove 3/4 cups and place in small pan with top, this will be warmed and served as a sauce with the cooked pork chops.

Brush remaining mixture over pork chops and allow them to marinate for 1/2 hour. While waiting for chops, preheat stove broiler. Set broiler pan so it is about 4 inches from heat.

Broil pork chops 8 to 10 minutes per side, bast with marmalade mixture. When done remove from broiler onto serving platter. Heat marmalade sauce over low heat until it is just below a simmer. Plate pork chops and stir sauce and spoon over chops.

Makes 8 servings
